Chorizo and Tomato Sauté
Ingredients
3 tbsp (3 x 15ml) Olive Oil
1 large red onion, halved and sliced
4 oz (100g) thick cut smoked bacon, diced
6 oz (150g) chorizo sausage, thickly sliced
1 lb (450g) plum cherry tomatoes, halved
1 medium red pepper, sliced
1 medium green pepper, sliced
1 medium yellow pepper, sliced
3 oz (75g) pitted black olives, sliced
4 tbsp (4x15ml) fresh parsley, chopped
Freshly ground black pepper
Serves 4
Method
Heat the oil in a large frying pan and sauté the onion for 3 minutes to soften it. Add the bacon and chorizo and sauté for about 5 minutes until the meats are sizzling and beginning to brown.
Add the peppers, tomatoes and olives and sauté for 3-4 minutes until the tomatoes have just started to soften.
Season with pepper, sprinkle with parsley and serve at once with crusty bread.
