Salmon Steaks with a Walnut Crust
Ingredients
4 x 6 oz (175g) Salmon steaks or tail fillets
1 1/2 oz (40g) walnuts, finely chopped
2 tbsp (2 x 15ml) fresh parsley, chopped
1/2 oz (15g) unsalted butter, melted
Salt and pepper
Method
Preheat the oven to gas mark 4, 180° C (conventional) 165° C (fanned). Place the shelf in the middle of the oven.
To prepare the salmon with a walnut crust, remove the skin from the salmon steaks using a small sharp knife. Mix together the walnuts, herbs and melted butter and spread over the top of each salmon steak.
Place the salmon steaks into a buttered ovenproof dish.
Bake for 20 – 25 mins or until the salmon is completely cooked.
Serve with lemon rice and broccoli.
